Experimental Study of Polyphenolic Compound Extraction from Turmeric by PEF Method

Abstract
The increasing demand for energy and the continuous reduction of its resources indicate the need to optimize and save energy. Environment-friendly Pulse Electric Field (PFE) technique, as a replacement for thermal method, is employed for the extraction of polyphenols from turmeric with different working conditions.The effects of electrical field intensities from 3.5 to 14 kV/cm, pulses numbers from 40 to 240 were investigated on mass transfer rate, extraction yield, and energy consumption. The phenolic content of the extracts was measured by using Folin–Ciocalteu by spectrophotometer.The results of statistical analysis show that with increasing field intensity and number of pulses, the amount of polyphenol extraction increased and the thermal energy consumption significantly increased compared to the pulse method.
